Nutritious and satisfying, breakfast is first and foremost about fueling ourselves and our families for the demands of the day ahead! Keep it light with a fruit salad (our go-to for hot days) or make things more protein-forward with an onion tart that’s easy to slice up and eat on the run.

Weekends are for being lazy and eating pancakes. Once in a while, it’s fine to reach for a mix, but making real pancakes or waffles from scratch can be such a fun project for a quiet morning at home. Potato Dishes

Potatoes are a classic brunch side dish, but you can also make them the main event! Frozen hashbrowns are a key short-cut ingredient in our breakfast casserole, and they are the STAR of hashbrown casserole (recipe linked below). If you’re more of an unprocessed foods person, simple roasted potatoes are always a hit and it’s easy to make a lot of them for a big group.

Quick Breads + Baked Treats

In some ways, things like zucchini and banana bread are the OG grab-and-go breakfasts. Banana bread in particular is one that our kids always reach for before school if we’ve got a loaf on the counter. Pop a slice in the toaster in the winter months, or just slice and go in the warmer months. The oat scones are great with jam if you have time to sit and enjoy, but they taste just as good on the go.

Easy Tex-Mex Brunch Classics

When we wake up hangry, it’s always Tex-Mex brunch foods that we crave! From classic dishes like tortilla chip-flecked chilaquiles, to cheesy and flexible breakfast quesadillas, these recipes go well with hot sauce, and (if you don’t have anywhere to be) a breakfast beer or michelada.

Avocado Bacon Omelette

Description

This creamy avocado omelette recipe combines rich goat cheese and crispy bacon for the ultimate breakfast idea! Ready in just 15 minutes it's a perfect easy brunch recipe or for a quick protein-packed breakfast! This fluffy omelette delivers restaurant-quality flavors with simple ingredients.

Ingredients

  • 1 tablespoon salted butter
  • 3 large eggs, whisked
  • ¼ teaspoon sea salt, plus more for serving
  • Freshly cracked black pepper
  • 2 ounces goat cheese, crumbled
  • 2 slices thick-cut bacon, cooked, roughly chopped
  • avocado, pitted and sliced
  • Microgreens, for garnish

Method

  1. Melt the butter in a medium skillet over medium-low heat. Once the butter is melted, swirl the pan to coat.

  2. Pour the beaten eggs into the pan and season with salt and pepper. Cook, undisturbed until the bottom is set, 2-3 minutes. Using a large spatula, flip the eggs. Sprinkle half the eggs with the goat cheese and bacon and top with the avocado. Fold the other half of the eggs over top.

  3. Transfer the omelet to a plate, top with microgreens, if using and serve.

    What breakfast are good for kids?

    It depends what your kids like to eat but here are a few options: smoky bacon, potato and cheddar hash. Migas. Hard boiled eggs. Apple and maple baked oatmeal. any of the pancakes listed. zuccchini muffins. jam dot oat scones. Hope this helps!
